I would like to display MSP on two signs. Does this require two licenses of MSP?

Each license of Media Sign Pro is valid for one computer system.  You can split the signal coming out of the system (free of charge) if you would like to display the same content on multiple displays.  If you would like to display different content on multiple displays then this will require multiple licenses.

In order to split the feed to two monitors in different locations could I do this wirelessly or would I have to run cable from the base computer to each display?

Yes you can accomplish this wirelessly using a wireless HDMI transmitter. There are a couple on the market but we would encourage you to check with the vendor to get their specs on distance and compatibility. For better results you might consider using a HDMI over CAT5 or CAT6. Gefen makes a device that will for you this (http://www.bhphotovideo.com/c/product/600774-REG/Gefen_EXT_HDMI1_3_...). Works really well. 

Example Setup:

1 Mac Mini

2 Displays

1 Video splitter (This will allow you to split the HDMI out from the Mac to support multiple video signals)

2 Wireless HDMI transmitters

Again make sure that you test and ask questions before making a purchase.

Or you could send it through VGA into a CAT5 converter with audio.
